This salad combines nutrient-rich beetroot noodles, along with feta cheese for a more saltier taste. The crumbly cheese brings out the earthy sweetness of the beetroot just perfectly. The salad is sprinkled with walnuts, fresh parsley and extra virgin olive oil which looks amazing and tastes amazing, and this style of salad can be served up with anything such as a salmon, chicken or whatever you fancy here is how to make it:
What INGREDIENTS you will need:
4 large beetroots
1 large handful of quality feta, roughly crumbled
1 handful of walnuts* – or pumpkin seeds
1 large handful of parsley, roughly chopped
Juice of 1 lemon
How to MAKE IT:
1. Toast a handful of walnuts in a dry frying pan.
2. Wash the beetroots, top and tail and then spiralize using the ribbon blade {this is what creates your beetroot noodles}. Snip long strands into shorter lengths for easier eating.
3. Season the beetroot ribbons with a pinch of sea salt and a good grind of black pepper and toss with the chopped parsley, lemon juice, a generous drizzle of extra virgin olive oil.
4. Scatter over the feta cheese and the walnuts to serve.
