Ok I must confess I love eating Bounce Coconut Macadamia Protein Balls they have to be one of my favourite on the go {gluten free snacks} that I either have in my handbag or gym bag. But at $3.00 a snack for a 40g protein ball it can work out to be rather expensive…..so what if you could make your very own? Then easy because this is how:
Ingredients you need:
40g shredded coconut
35g desiccated coconut
60g macadamia nuts
50g almonds
20g coconut oil
1/2 tablespoon honey
For the filling/coating:
12 macadamia nuts
50g desiccated coconut
How to:
Start by roasting the macadamia nuts in a pan for 10 minutes until golden brown.
For the balls, place all ingredients in a food processor and blend until smooth and sticky if you don’t have a food processor use something else.
Take a small amount and flatten in your hands, place macadamia nut in the middle and form a ball.
Roll in the desiccated coconut.
Repeat until you have used up all the mixture.
